Sinead Clarke's Baked Chicken With Chorizo

My own concoction – quick and easy recipe to prepare, especially if you’re a busy mom. And it’s totally yummy!

Serves 4
Preparation time: 15 minutes
Cooking time: 45 minutes

Ingredients:

  • 1 Red Onion
  • 1 Red Pepper
  • 1 Tin of Chickpeas, drained and rinsed
  • 2-3 inches of Chorizo, sliced
  • 4 Part boned Chicken Breasts, skin on 
  • Paprika 
  • Salt and Pepper
  • Glass of white wine or water
  • Parsley to garnish


To Cook:

  1. Slice the onion and pepper.
  2. Place both in a casserole dish along with the chickpeas and sliced Chorizo.
  3. Score the chicken using a knife and rub with a generous sprinkling of paprika.
  4. Sit the chicken on top of the vegetable mixture and season with salt and pepper 
  5. Add the wine (or water) and bake in a preheated oven for 45 minutes at 180˚C/350˚F/gas 4.
  6. Garnish with parsley and serve with potatoes or rice.
