Chicken with Orange Sauce (Chicken Seville)

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon of olive oil
  • 50g butter
For the sauce:
  • 1 small diced onion
  • 1 crushed garlic clove
  • 150ml chicken stock
  • 150ml fresh orange juice
  • grated zest of 1 orange
  • 2 chopped scallions
Orange slices and scallions to garnish

To Cook:

  1. Melt the butter and oil in a large pan and add the chicken breasts. Fry gently until lightly brown, then remove from the pan and keep warm.
  2. Add the onion and garlic to the pan, and fry until golden. Return the chicken to the pan and add the orange juice, zest, scallions and stock.
  3. Cover the pan and gently simmer until the chicken is tender, approx 20-25mins.
  4. Serve garnished with orange slices and scallions.
