Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon of olive oil
- 50g butter
For the sauce:
- 1 small diced onion
- 1 crushed garlic clove
- 150ml chicken stock
- 150ml fresh orange juice
- grated zest of 1 orange
- 2 chopped scallions
Orange slices and scallions to garnish
To Cook:
- Melt the butter and oil in a large pan and add the chicken breasts. Fry gently until lightly brown, then remove from the pan and keep warm.
- Add the onion and garlic to the pan, and fry until golden. Return the chicken to the pan and add the orange juice, zest, scallions and stock.
- Cover the pan and gently simmer until the chicken is tender, approx 20-25mins.
- Serve garnished with orange slices and scallions.
