These days so many of us end up cramming a quick sandwich into the middle of a rushed day, that lunchtime scarcely gets the respect it deserves. So why not make it a plan to take a little time over lunch every so often and try something new.
Soup too salty?Have you been a bit heavy handed with the salt while preparing your favourite soup? Here’s a handy trick. Place a raw potato in the pot and simmer with the soup for about 15 minutes. The potato will absorb the excess salt! |

Simply SeafoodHere’s a healthy lunch idea. Blend some broccoli and coriander with an egg then add a little sweetcorn. Mix in a tin of salmon or tuna. Shape the mixture into fishcakes and bake at 200°C for 20 minutes. Serve with a fresh salad. |

A Sweet Alternative.A great variety of possible fillings means there’s nearly always something new to try in a jacket potato. But have you ever thought about changing the potato itself. Instead of your usual spud try baking a sweet potato and top this with your favourite filling. |

Freeze AheadDo you find yourself spending morning after morning making sandwiches for the kids lunches? Why not freeze ahead? Many sandwiches can be prepared and then frozen for up to one week. Wrap each one individually in kitchen foil, and put it in a closed plastic bag to freeze. Sandwiches will thaw at room temperature in about 1 hour and will stay fresh for 4 hours if left wrapped. |

Keep Your CoolTo keep drinks cold in your kids’ lunch boxes, pour a small amount into the container (not glass) and then set the cap loosely on top. Put it in the freezer overnight. The next morning, top it up with the rest of the drink. The ice should slowly melt during the day, keeping the drink cool for lunchtime. |
