Enjoy this Blue Cheese Salad with fresh fruit such as peaches, nectarine, mango or dried cranberries - whatever takes your fancy! Also substitute goat’s cheese or feta cheese for the blue cheese if you prefer. Experiment!

Cooking Instructions

  1. Chop the nuts coarsely and add to a dry pan over a medium heat and toast gently for a minute or 2
  2. Add the pumpkin seeds and then the sesame seeds. Keep shaking the pan. When you can smell the nuts and seeds have begun to brown, turn out into a clean bowl to cool
  3. Wash and dry the salad leaves – use whichever ones you like
  4. Cut the apples, pears, mange tout/sugar snap peas into bite sized pieces and add to a large bowl. Add some salad dressing and mix through to stop the fruit discolouring
  5. Cut the blue cheese into pieces and add to the fruit with the cooled nuts and seeds
  6. Add the salad leaves and fresh herbs if using and gently mix everything through
  7. Add more salad dressing if required
