Ingredients
- 2 Thinly Sliced Chicken Breasts
- 2 tablespoons Meridan Peanut Butter
- 60 milliliters Water
- 2 tablespoons olive oil
- 1 tablespoon Pine Nuts
- 1 teaspoon Lazy Garlic
- 1 teaspoon Cayenne pepper
- Half teaspoon Chilli Flakes
- Salt and Black Pepper
- Large Handful of Fresh Basil Leaves
- Green Beans
Cooking Instructions
- Place peanut butter, water, olive oil, pine nuts, garlic, cayenne pepper, chilli flakes and basil in a blender and blend until smooth
- Heat the oil in a large wok and stir fry chicken, season with salt and pepper
- Cook rice noodles as per pack
- Add the peanut pesto and noodles to cooked chicken in wok, mix well and heat through
- Serve with a side of steamed green beans and a sprinkling of black pepper
