Cooking Instructions

  1. Place 1 tsp of oil in a skillet over medium heat.
  2. Put the potatoes in a pan of cold salted water and bring to the boil.
  3. Add diced potato and peppers to the skillet stirring for 8 - 10 minutes.
  4. In a bowl whisk the eggs, salt, chopped tomatoes and grated cheese.
  5. Add the egg mixture to the pan cooking until the edges are cooked and put under a hot grill for a few minutes until it’s fully cooked through.
  6. Top with spinach and serve.
