Combine oyster sauce, soy sauce and mirin in a small jug. Set aside. Heat 1 teaspoon of the oil in a wok over medium-high heat. Stir-fry beef in batches for 2 mins or until browned. Transfer to a plate. Heat remaining oil in the wok. Stir-fry spring onion, carrot and mushroom for 3 mins. Add garlic and stir-fry for 1 min.
