Ingredients
- 12 Digestive biscuits
- 100 g chocolate milk or white
- 55 g Butter
- 200 g sweetened condensed milk approx. half a tin
- 1 pack pink & white marshmallows
- Desiccated Coconut for rolling
Cooking Instructions
- Crush the digestives finely – pop them in a bag and roll with a rolling pin.
- Prepare a bowl or tray with coconut for rolling, and keep a bowl of warm water handy to dampen r hands (this helps stop the mix from sticking).
- Melt the chocolate and butter together in 30-second bursts in the microwave, stirring until smooth.
- Stir in the condensed milk and crushed biscuits.
- With damp hands, scoop a small amount of the chocolate mix, flatten it into a disc, and place a marshmallow in the centre. Wrap the mixture around the mallow to form a ball, then roll it in coconut until fully coated.
- Repeat until all the mixture is used — work quickly so it doesn’t set too soon!
