Ingredients
- 1 Red or yellow or Orange pepper sliced
- 1 Red Onion sliced
- 1 Carrot finely sliced
- 1 Courgette sliced into half moons
- 500 g 500g of chicken thighs finely sliced (or chicken breasts)
- 1 tbsp Oregano
- 1 tsp Paprika
- 1 tbsp Cumin
- 1 tsp Garlic powder or 1 large fresh garlic clove
- Olive/veg oil
- Salt and Pepper to taste
- Lemon or lime juice fresh or bottled
Cooking Instructions
- Preheat oven 180 degrees
- Pour 1 tbsp of oil and spices over the vegetables and chicken
- Salt and pepper to season and mix everything together on a large roasting tray
- Roast for about 25-30 min
- Then finish with a big squeeze of lime juice if you have it or lemon juice and mix everything together
- Serve with tortilla wraps, natural yoghurt/soured cream, grated mature cheese and avocado/guacamole, salsa
- Leftovers can be frozen or you can reuse the leftovers and have some rice with it so it is like a burrito bowl.
